		<description>Oh yum.  This sounds so good.  I never knew to skin the eggplants, that&#039;s been my main problem with any baked dish...I agree, the skin is a little bitter.  

I can&#039;t wait to try this recipe!  We are not vegetarian, but most, maybe 75% of our meals are meatless.  This would be a terrific addition!</description>

		<description>Susan - you need to buy it fresh.  Eggplant is very sensitive to age.  Costco would be the last place I would try eggplant!  I bought mine fresh from Whole Foods and it was delicious.</description>

		<description>I sampled eggplant at Costco recently and had a hard time getting it back out of my mouth without being seen.  The Costco version was disgusting.  Yours sounds much better but now I&#039;m too afraid to try it!</description>

		<description>For myself, I just skin eggplant and then cut it in thin (1/8 inch?) slices. I put the slices on aluminum foil (sprayed with cooking spray) under the broiler, and spray the eggplant on top with a little cooking spray too. I broil at, I don&#039;t know 400 degrees for 20-25 minutes, turning them over at some point. Then, you sprinkle some feta cheese on top and eat the whole plate of them.

Now I&#039;m in the mood for this....</description>
